I Just got in a Samsung Galaxy S20 5G, When I add it with system apps enabled the system apps are missing.
The big app that is missing is the Samsung Galley app.
The play store says it not available on this device,
If I set the phone up without enrolling it all the system apps install.
Any help would be appreciated,

Same issue with Samsung Galaxy A51.A lot of Samsung apps are missing and can not be installed even if they are approved on the Entreprise Google Play. Apps concerned are : Gallery, Galaxy Store, Bixby... Some Google apps could be concerned too.I added a Samsung account and try to launch/install app from Settings menu but this action also did not work.

For information, I recovered the log files of a mobile with this issue from Sophos Mobile. If necessary i can send them.

Our team is currently in the process of testing the fix of the issue which is planned to perform a staged release externally beginning of next week.
you just need to follow some steps is:
New Android releases always bring exciting new features to the table, but every once in a while, a beloved feature gets reworked or removed altogether. That's no different for Android 11, which made it more cumbersome to grant apps the permission to install APKs, requiring a restart of the application in question up until at least Developer Preview 4. While that requirement is still present on more recent builds, the situation is now slightly improved: when apps are programmed correctly, they'll restart the latest activity, making the experience as smooth as possible.

French Sophos support team just informed me that the issue has been resolved and that an update should be released soon

The new client has version 9.7.3767
To make the System apps appear again customers can use the following process:
- Update the client on the affected devices - After the client is updated, make any change in the applied Android Enterprise policy - Save the change - Open the Sophos Mobile Control app and synchronize - After a few seconds the System Apps should appear on the device
