I suspect you'll need to get info from Gmail and Microsoft to find out what subnets and/or 'DNS Group' definitions you'll need to allow from the one user. After that firewall rule, you'll want another rule to block 'Email Messaging' from that user to 'Internet'.

You may visit this KB from Google on what to whitelist from specific Google Mail domains and can be configured from the firewall side in order for Gmail to be exempted: https://support.google.com/a/answer/9497877?hl=en
