As the Super Admin, am I able to manage each self-portal if needed? Can I see who has responded to the company-wide Invitation to set up a self-portal? Can I see each employee's Allow/Block List and/or manage it? Can I change an employee's self-service portal password as the Super Admin? Can't seem to find anything on this, although Sophos Chat said I am able to do most of these things (but wasn't able to direct me anywhere).

As far as I am aware this isn’t possible at the moment, but there are improvements for the Super Admin and the SSP.
