Why dont you allow the customer to restore from a backup. Why does it have to be done by SOPHOS?

Restoring configuration from backup within the Admin UI is indeed a feature we plan to include in the Email Appliance in the future. In the meantime, Sophos Support can assist you if you need to restore from a backup you've created.
Out of interest, what are you most concerned about having to restore? Is it mostly around policies that you've changed and want to revert?
Note that in a cluster of one or more appliances config data is automatically replicated, so in the event of a single appliance failing you would not lose your configuration.

I am most interested in restoring the policies. We have about 10 encryption policies that I would like to be able to restore quickly if they get messed up.
It is just a very nice feature to have and I don't want to have to rely on the turnaround time of SOPHOS to do a restore.
