I have a bunch of Zebra TC57 and typically enroll them with the QR code. I got to that step with the Zebra EC30 to realize, it does not have a camera only a 2D scanner. It has an option to Enroll Manually but I need Security Token, Server URL, and email and I can't seem to locate that in Sophos Dashboard anywhere.

When you are using the "Add device wizard" the final page during enrollment displays the QR Code as well as the fields mentioned in your post for enrollment.

Thanks for following up with us. My original reply was a little inaccurate, as I had the option for "Legacy Device Management" enabled when testing this.
I was able to verify that the Zebra EC30 is a supported Android Enterprise device.
It looks like this device is also capable of scanning QR codes. I was able to find this information in the following product information sheet. On page 130/134 under "Data Capture Supported Symbologies".
