we are moving all our iPhones to Apple DEP. Is it possible to apply a DEP Profile on iPhones, so that it just proceeds with the installation of the SMC app without Apple ID and Password ?

You can create DEP profile as mentioned in this document and select the Install SMC app on Enrollment tab, you must also disable the Skip Apple ID option on the iOS setup tab to make sure that Sophos Mobile can install the app from the App Store. For central mobile, please refer to this link(the process is similar).
