So far I have
1) Added domain and verified and added IP address of where email should be forwarded to2) Added mailboxes3) Added mx records for my Sophos region (as shown in the configuration)4) using mxtoolbox.com, verified that the listing is correct and done smtp test which works to both Sophos However, email is not reaching Sophos, nothing shows in dashboard, or logs or message history.Have I missed a step?

If you’re not seeing emails arriving to Sophos Central, most likely your MX records aren’t updated properly.
Make sure the MX records…
Make sure the MX records you added are the ones from your region and that you don't have any other MX records added to your MX record.
Sometimes depending on your 3rd Party DNS provided the MX records can take up to 24hrs to update globally.
