Is there a way to see the email history of internal emails. I can see all incoming and outgoing, but nothing for emails sent inside our own domain?

Sophos Email customers using IP-based mailflow rule connectors must migrate to certificate-based configuration by March 31st. To see if you're affected Click Here.

Hi,
Where mails are hosted? You are not looking logs means your internal mails are not scanned by the Sophos email gateway. I think your mail server is not supporting or you didn't configure the correct connector for the same.

Hi,
I am not an office 365 expert so I can' answer you completely but If you configured Outgoing and Incoming Connectors then the office365 will not send internal mail on the public MX records. Office 365 behavior is different. If you are using Google then Google is using a dual delivery system and all (internal and external) mails are routing over the MX Records. But this facility is not avaiable with office 365.
Thanks,

You can only see Emails that are scanned by Sophos Central. If your mail server is configured not to send internal emails to Sophos Central Email, you would not be able to see that. The best way to know is to check the Email header of an Internal email and see if there's a header similar to X-sophos.
