1- I want to sanboxed programs to access an isolated empty %appdata%, not my real %appdata%. How can I do it?
2- Why it is not set by default. Isn't important a Spyware harvest online accounts datas programs store there?

That's the default behavior. If you want to access the appdata folder of other sandboxes maybe you can use symlinks. Never tried that though.
So why when I run sandboxed Firefox, it uses my real profile?
Oh, that. Sandboxed programs can read every file outside the sandbox, unless you modify them in the sandbox. I think if you open the sandbox with "Run Windows Explorer" then go to the Firefox appdata folder and delete it, the programs within that sandbox won't see the folder anymore.
When I try to delete appdata folder it keep asking for administrative privilege. I tried run C:\WINDOWS\explorer.exe as UAC administrator it gave an error
Also I tried to delete some files in documents folder in sanboxed explorer but it said they are open in another program
You can use the "WriteFilePath" setting for %AppData%.
