In the script (SophosGoldImagePrep.txt) that you can download, tamper protection is turned on again in the last step. 
This is not mentioned in the manual steps.

  • Tamper protection will turn back on automatically once the new server/endpoint is powered on.
    Since step 1 indicates turning off tamper protection on the computer (from the Sophos Endpoint Agent UI),
    Sophos Central will automatically turn it on after 4 hours.
