I am trying to amend the Web Control Policy in Sophos Central, however they are greyed out and won't allow me to change from "Block".
Please advise.

From the screenshot provided, it seems the default option " Keep it clean" is being selected, I would request you to change it to " Let me specify" from the dropdown under acceptable web usage and under Productivity-related categories and then you should be able to make the changes under that specific category. Let me know how it goes.
