Endpoint to cloud

Hi

Just after some help please. 

We have endpoint covering 100 devices and looking into moving over to cloud solution. 

Is it possible to uninstall the old agent off the computer and install the new agent ? or can the cloud solution detect the old agent and uninstall it to install the new agent ?

    I already have a license on our endpoint till the end of this year but the current endpoint no longer support win7 and 2008r2 so how do go about getting Sophos central 

    Also I wanted to do it in stages as we are a pharmacy so I can plan around the users in our branches I don't want to do this in one go. 

    So I was hoping that I could uninstall the old agent and then get the Sophos central to install the new agent.
