The settings that need to be altered are found in the Puremessage console
Configuration -> Transport (SMTP) scanning policy -> Anti-Spam
Click on the "Change Anti-spam Settings" and put the top slider to the spam score that you want everything deleted too. e.g. if you are happy that everything with a spam score of 80 and above will always be spam place this to 80. Then set the Inbound Messages On Spam to delete and everything from the score you defined to the score of 100 will deleted and not quarantined.

I cant believe its so simple (lol i do keep finding that with Sophos though!)
I should really stop trying to over complicate things and treat the system as though im an alien looking at it for the first time ^.^
