Question about Remote Desktop and SSL VPN

So we are moving away from Citrix for our remote access. However we still need to access some applications internally. I have been working on trying to implement this using Entra App Proxy and the Web Client. This has proved to be an unsolvable nightmare, I have been on the phone with microsoft multiple times and still having issues.

So I am going to switch gears and try and use the Sophos SSL VPN for access to a traditional remote desktop setup. My main question at this point from an overview standpoint. is how you just send the traffic to the VPN just for the site you want to get to. Lets say that the internal server is RDWEBSVR1 and the address that we have internally in DNS translates remote.yourdomain.com to the server internally. Is this able to be set somewhere in there? I have been reading and watching videos to get a general idea. But just wanted to make sure before moving forward and investing a lot of time.

Thanks for your help

Tim
