My Virtual Sophos XG running on VMware ESXi has a 10Gb/s physical NIC. But the Sophos VM only shows the Virtual NICs with a Speed of 1000Mb/s.
Why don't they show up with a speed of 10Gb/s?

I have virtual XG firewall in my LAB environment and link speed is 10000Mb/s on an interface. Could you please SSH into XG firewall by following this KB Article: Sophos XG Firewall: How to SSH to the firewall using PuTTY utility and navigate to option 5(Device Management) > Option 3 (Advanced Shell) and run this command "ethtool PortA" and share the output?
Replace the interface name accordingly. In my case it was PortA.

There is a bug in the virtual driver of VMware right now.
The auto negotiation seems to be broken.
Try to switch to other driver. Try VMnet3 https://communities.vmware.com/thread/463728
