I'm setting up as a test with FULL Device policies a smartphone. The thing is when I add email policies to the device, it automatically installs GMAIL as default email app.
Is there anyway to change that? By that I mean for eg: set Outlook or others apps as default? If yes, how so?

Hi, no I've never found anything about default apps. I think it's something based on the policy. Because every time I apply it, it automatically installs GMAIL and asks for email and psw of the user.

Try using the "Managed App" configuration options within the Outlook app from the page "Apps > Android > Microsoft Outlook". This will allow you to distribute the desired application along with the email account settings to the device.
Once done, you can remove the email policy and instead rely on the Managed App configs.
Ok thanks I will try, but is there a way automate the setup of the outlook mail, like it is on gmail? By that I mean:
1)Applying a policy to install Outlook on every phone
2)An alert pops up(or notification) asking to set up your work email in outlook -> like it does now with gmail, once installed an alert lets you know to finish your email configuration.
The Managed App configuration settings will function very similarly to the email profile. It will populate the account information automatically.
If you wish to automate the deployment of the Outlook app, I suggest checking the neighboring thread here. A task bundle would be best to install Outlook with. This way you can push the task bundle to multiple devices at once.
Maybe you could try using any alternative of Outlook Or GMAILAir Fryer
