We have an MDR virtual appliance deployed. We are looking at installing physical MDR "mini-servers" at other sites. We haven't been able to find any information related to this. Is this an option? Any related advice or best practices for deploying these if they exist?

When you mentioned MDR Virtual Appliance, can you confirm whether this is MDR or NDR?
Are you trying to install Sophos MDR product and not NRD Sensor?
For MDR, as long as your Mini Server meets the recommended requirements, you can install it normally by following the steps here.
If it's NDR, you can run the appliance on VMware ESxi or Microsoft Hyper-V. We don't support physical servers for this product. You may refer to this Documentation.
