I guess my issue is my virtual environment runs on Microsoft's Hyper-V, not VMware. So will I be able to take advantage of the thin clients running on the guests, or do I just install the standard server installer, on the host hyper-visor and all the guest VMs?

Unfortunately, at this time we do not offer any product specific to Hyper-V and I can't comment on any future plans for such product.

You can always use the regular Server Endpoint protection, which can be managed on-prem or in the Cloud for your virtual Hyper-v servers.
