If you can reproduce it, I would suggest running Process Monitor - Process Monitor - Sysinternals | Microsoft Learn then re-start the install up until the error then stop Process Monitor from recording.
It will be interesting to correlate the failure, I assume there is a message in the Sophos UI install log (%temp%) which will give you the time stamp, otherwise, maybe filter the Process Monitor log for path contain "Sophos UI.exe". Does the installer fail to put the file in the location mentioned in the error? Is there an error reading the file? Hopefully it will explain the reason,
