Are some of your devices enrolled in any Early Access Programs in Sophos Central?
I also suggest checking the "Software Packages" page under Global Settings to verify if this may be affecting the versions you're seeing deployed. Most devices will be on the Recommended package, unless there are specific reasons for them to be on a fixed package or a LTS package.
