Are these service extensions actually needed ? OR what is the purpose of them ?

Thanks for reaching out to the Sophos Community Forum.
The two components you're inquiring about are responsible for scanning the local system and all incoming network traffic. I'd suggest opening the "Sophos Endpoint Self Help" tool to check the "Prerequisites" tab. There you will find a "Fix It" button which will open the required UI menus for you to update the permissions.
