I would like a setting from Sophos central to have block Bluetooth but only connect Bluetooth headphones which only transmits 2-way (in and out) audio but no data or file sharing.
It is Possible or not...?

Thanks for reaching out to the Sophos Community Forum.
To do this, you will first need to configure the Peripheral Control policy to "monitor but do not block". Once this policy is applied to your devices, you will need to connect your Bluetooth device to your computer.
You can then change the policy to "Control access by peripheral type and add exemptions," and through the "Peripheral Exemptions" window, you can locate and exclude your Bluetooth device.
It is not possible to define whether you'd only like to allow Audio vs Data when creating a peripheral exemption.
