• Are any specific Sophos Processes consuming higher CPU or RAM?
• Does the slowdown occur when you're running specific apps on the system?
• Have you tried component isolation to see if certain scanning features contribute to the issue more than others? 
• Do the system resources meet the minimum requirements?
