Hi Dan. I’ve done some limited testing and had the same result as you. Blank when saving.
I think it’s going to be one of the fields and characters it doesn’t like and rather than producing a logical error it’s returning a blank/null value.
I started doing one by one in order to catch which field it doesn’t like but ran out of time!
Will attempt some more testing for you but that’s what I suspect it is?

I've had more success with using 'USBSTOR\DiskKingstonDataTraveler_2.0' in Hardware ID. I kept the reference at least after a save, but I didn't populate the remaining fields. I'm not sure if it's quoting or actually giving an example to use ' !
If you enter some rubbish in the field it will tooltip you what it expects in the field - at least mine did and it helped a little!
I'll carry on testing though, but suspect it's being very fussy about the Hardware ID field...

If I add what you did, when saving it stays but then when I go to a different section and then back in it disappears.
Mine is saving, at least I've exited the console and logged back in as a different user and it's still there. My money is still on characters it doesn't accept/like but have you logged this with Sophos?
I haven't logged this with Sophos yet, do you have any contact details?
Also can you give me an example of what worked so I can try?

You used to be able to email support@ but sadly they stopped that. I was told with a premium support package (which we have) we would have a dedicated support channel too but....
