this can be done in Preferences -> On-access Scanning. Note that Excluded Items lets you exclude files and folders, not specifically an app (if it is not self-contained - just mentioning it as the term app is often used ambiguously) and the files it accesses. Please see the Help for details.

Yes, I think so:  when the software is first installed it will run through your entire filestore to check that you have no known viruses.  This will naturally take quite a long while.   However, once it has done this - and you are declared clean - it will only need to check new files being down-loaded, which takes next to no time at all.   Of course, if you attach external file stores (external discs for backing up, say) it will also go through those to check them...
