I have a metered internet connection and would like to block windows updates and allow from 2am to 6 am

Configure a time event definition in Definition & Users > Time Period Definition. Configure a new filter policy on TOP within the web filter profile and make sure to define the time event. Here, you can select the custom time event definition. Finally, add the Microsoft update URLs in the block these websites option found in the filter action.
This configuration will block the Microsoft office URLs in the defined hours. The required URLs:
windowsupdate.microsoft.com
http://*.windowsupdate.microsoft.com
https://*.windowsupdate.microsoft.com
http://*.update.microsoft.com
https://*.update.microsoft.com
http://*.windowsupdate.com
download.windowsupdate.com
http://*.download.windowsupdate.com
test.stats.update.microsoft.com
ntservicepack.microsoft.com
