Restrict access to specific domain names

Hi,

i am looking to create rules on my web filter to restrict access to specific sites. I looked for the proper step by step document regarding the Sophos UTM 9 which explains that but i can find it. it seems there are many ways to do it.

i am not interested in restricting it per category (although it would be nice to know that as well)

where can i find the documentation for that? both by category and by the domain name.
