When setting up DHCP on the UTM for a RED device, is it best practice to set the DNS server as the interface IP of the RED or use the IP address of the Internal LAN DNS server?

Hi, and welcome to the UTM Community!
That depends on how you have DNS configured in your topology. If you've configured as in DNS Best Practice, then I would tend to prefer the internal DNS server IP.
