So I am trying to change from my ISP DNS servers to OpenDNS, and I have it set up but keeps saying under "currently assigned forwarders" that it is using the ISP DNS servers.

That feature is a bit buggy, sometimes my UTMs keep our internal DNS servers from initial setup as "currently assigned forwarders". Simply uncheck the checkbox, then automatically assigned DNS servers aren't used anymore.
If you setup no forwarders manually then the UTM uses the root hint servers, what will be ok in most cases (but slower in some ms range). If you setup forwarding servers be sure to use an "Availability Group" to do so where you then place the different DNS servers.
