Fake EMAIL Address

Are you talking about recipient verification in an Email? For that, you may configure the Recipient Verification option under Email Protection > SMTP > Routing.

no I mean the Sender Address.

You see in outlook Mail from: "Givenname Lastname <Givenname.Lastname@xxx.com>",

but can't see the real Sender Email-Address a.a@fake.com.

You can see that in outlook only if you put the mouse pointer over "Givenname Lastname <Givenname.Lastname@xxx.com>".

If sophos can check that Givenname.Lastname@xxx.com not equal  a.a@fake.com and put this in quaratine, it will be helpful for us.

Unfortunately, that is not possible with the current version of Sophos UTM9. You can raise a feature request for this here.
