Hi, the Intel onboard video uses shared RAM and wastes a lot of memory (hundreds of MB).

That's why servers never use it.

Afaict, The UTM uses standard vga modes so it should work with most video chips.

I know there is no need for any kind of high end video card and that on boards steal sometimes large chunks of ram. But you need a video driver to have the monitor work. Are you saying that this "no name" Aspeed video chip will most likely work with Sophos UTM?  By what, some kind of industry standard "basic" protocol that all video chips use?  It is just me, I am not in the computer industry so I am kind of clueless to servers. But, would Sophos have built in drivers for some obscure electronics company Aspeed that makes video chipsets?

OR is there a way to load the video drivers in before or after loading the Sophos ISO?

I wouldn't worry about the ASpeed video chip.  I've got a couple of Supermicro boards with IPMI and two of them have NEVER seen a monitor!  IPMI is slick, all the server needs is the power cord and ethernet cables.  You can turn it on/off/reset, mount virtual .iso drives, and do all installs via a network attached workstation.  Shove that server in a closet somewhere and never have to physically touch it again.
