if you want to use a larger disk on the XG you will need to install a VM of some sort, then install the XG.

Thanks but I don't want to put this in a VM (which does work). This isn't a large drive. My goal is to install this on server hardware with a hardware based redundant disk. I would have thought this would be supported and pretty straight forward?
For a home licence, no. For a business when using a very big XG yes, but that is hardware licenced.
If you take regular backups a redundant disk is just waste ofpower and an increase in the point of failures.

I've definitely seen XGs and UTMs installed bare metal onto Dell and HP servers as we have a couple of Customers who run phat SSD backed RAIDs for their boxes.
As long as it's a core brand RAID controller and is supported by at least Linux Kernel 3.4 I'm confident you shouldn't have a problem.
It's FakeRAID and legacy RAID controllers i would be wary of.
