Network traffic for right sizing Sophos XG

Good morning fellow Sophosians (is that a term)?

I posted a question and a follow up question on Reddit as well. 

I am looking to deploy an XG for some clients and I am looking for a way to monitor traffic to determine how much traffic is passing over a WAN link for high and low peak times. I'd also like to know what type of traffic is passing so I can determine what rules to create and ensure I right-size the XG for present needs and future growth.

I do have an XG105. While I know it is not supported any longer, and I won't deploy it for production network security, can it be used to put inline or on a mirrored port to do this type of reconnaissance? Do you know if there is there a way to capture this output and export it for review?

I am trying to get a sense for the highs and lows of their traffic flow times and the type of traffic that is being passed.
