how to check the number of client licenses used in Sophos Enterprise Console

    But then how do I know the number of license that I used, and how the position decommissioned how the recovered license in order to use on another machine

    as said, there is no mechanism which controls the licenses you use (other than your conscience [;)]). If you have a, say, 100 user/device license you can install and manage Sophos on 110, 500, 1000, or even more endpoints. Physical assets don't just pop into existence, for Windows endpoints you need the OS licenses as well, thus it shouldn't be too hard to estimate the necessary number. If you don't reuse the names when you replace devices you'll get stale, dispensable entries in SEC - it won't enforce a limit though.
