Firefox 5 is not yet listed as controllable destination. As the executable is also not yet detected by Application Control, it is for the moment possible to bypass DLP. Is this correct?

If you're really worried and have AD, you could always create a software restriciton policy hash rule:
http://technet.microsoft.com/en-us/library/bb457006.aspx#EHAA
to suppliment protection and block a certain version of a file, in this case firefox.exe.
