Firefox 5 is not yet listed as controllable destination. As the executable is also not yet detected by Application Control, it is for the moment possible to bypass DLP. Is this correct?

Yes, this is a gap. We are looking to plug the gap asap. The mozilla switch to quarterly browser updates has caused a few problems and we are reviewing how we cover Firefox (probably by switching to a single definition to cover all versions).

If you're really worried and have AD, you could always create a software restriciton policy hash rule:
http://technet.microsoft.com/en-us/library/bb457006.aspx#EHAA
to suppliment protection and block a certain version of a file, in this case firefox.exe.
Cheers,
