I could not find any information on how to get access to the EAP.
Currently my university does not auto-update to this version as they will wait for the stable version. But currently any additional safety would be helpful.

Since this is an Early Access Program, it's highly advised that production devices not be enrolled.
I would advise that you reach out to your university's IT department to further discuss your situation 
For reference, here's the link that outlines how to get the release of 9.10.1 (Preview subscription), that supports Big Sur.
