I am very new to Sophos.
I was looking into a performance issue we are having on our document server and in performance monitor I noticed that on the disk screen that savservice.exe was coming up for files that are being read.(???)
in the exclusions we have these drives excluded.
does this indicate the we have the exclusions set up wrong??

my post was admittedly succinct - fortunately your screenshot shows the bare minimum [:)]
If I interpret it correctly this is the local configuration on the endpoint (the server in this case) and these are the On-demand extensions and exclusions. From your initial post I surmise that the issue is not an on-demand (i.e. right-click, Scan my computer, or scheduled/immediate custom) scan and savservice.exe does its on-access scanning.
Guess what you want are not the On-demand extensions and exclusions but On-access scanning and there the tab Exclusions
