We are currently running Endpoint Advanced but have decided that Standard is sufficient for our needs, do we have uninstall and reinstall the software or will it be a case of just adding the new key?

while not up-to-date the article Sophos Licensing changes for Endpoint Protection 10 release basically applies. And as license changes normally don't result in a new set of credentials acknowledging the alerts might be all you have to do.
