I would like to know onething Sophos InterceptX Advanced EP can do skip scanning below these.
> Some folders/files in server : if don’t want to scan.(File type is x.raw and other proprietary formats).

Yes, it is possible to exclude certain items from on-demand and real-time scanning. You just need to indicate them on your scanning Exclusion list so that the endpoint skips them. You can do it either in Global exclusion or via Threat Potection policy.
I'd suggest checking the Wildcards and Variables documentation below.

You could enter an exclusion such as *.x.raw. I suggest taking caution when doing so, adding parent folders to your exclusion will help to make it more secure.
eg: C:\Users\Me\ProjectFiles\*.x.raw
