When an endpoint in Sophos Central shows an out-of-date device that needs updated... Is it better to force an update through Sophos Central Admin Dashboard or wait till it checks for updates automatically on the scheduled day/time?

If you see this alert, I suggest checking the device locally. If the device is connected to the internet, it will automatically update every hour. Generally, this alert will only be generated if the updates have failed or if something is preventing the update from succeeding.
In most cases, if the device has been online for a long period of time, a reboot is necessary before additional updates can be installed. You can check the system uptime on a device by checking the "Performance" tab of Task Manager when showing CPU information.
