According to the Sophos website, although we have chosen the EEA as the location for hosting the Sophos Central data on AWS servers, there is a possibility that the data will be transferred outside these areas for processing by the Sophos technical team.
Is there a possibility that we can limit or prevent this transfer of data outside Europe upon request to Sophos?

Could you share some context on where you found that statement so that we can get further clarification for you?
The highlighted option is related to the RepairKit tool that runs at the start of each update to check all is well with the install, if not, it can send telemetry to Sophos.
You could disable that I suppose. RepairKit will still run and fix things as needed but it will not submit the telemetry.
Maybe the Intellix option is worth looking at as well.
