GDPR - Intercept X Endpoint

Good afternoon,

I would like to know what data is collected by the Sophos endpoint (XDR). Or where can I see what data is collected.

Is there an option to block this collection?

    You can find more details on Sophos' compliance with GDPR at the following link. 
    - Sophos & GDPR

    Details on what type of information is gathered from your devices can be found on the following page. It may help to navigate into the Live Discover section in Sophos Central to run some "SELECT * " queries to get a better idea of the information stored. This data is kept for a 30-day period of time. 
    - Sophos Schema Data Lake

    When setting up Sophos Central, the data region selected will also be used for XDR data storage. If you wish to exclude devices from data collection, it's possible to do so by using the following navigation. 
    - Global Settings > Data Lake uploads
