MacOS Kext Extensions won't Enable

KEXTs will not load on Big Sur, that's one of the major changes made by Apple and you'll need version 10.0.2 or above, which should be updated automatically when that machine is assigned to the EAP. As mranonymous said, there is a known issue where machines cannot be joined to the EAP through an update cache.

Once you have 10.0.2+, the following KBA may provide some information that you'll find useful regarding extensions and setting the machine up correctly:

The zsh notice is from the OS, there's nothing we can do about that.
