Hi Steve, what you described is the usual method. Downloading the installer from Central and running it on Big Sur should work just fine, although the endpoint will not be protected until it is assigned to the EAP.
I am having this same issue- I have a fresh install of BIG SIR and went to sophos central and downloaded ENDPOINT protect - gives me the same error
Jason, I just installed the Home Version for now as it has all the same guts just no monitoring. I wasn't going to wipe out Big Sur and start from scratch. Hoping Sophos has an update soon so I can swap them.

We'd love to investigate the issue you're having - it's not something we've seen in-house and the logs would help a lot.
If you could zip up our diagnostics logs and share them with DropBox or OneDrive or something similar that would be great. You can DM me the link and I'll get them to an engineer for analysis.
