For Management - Any policy changed made in the dashboard will be queued for when the client connects. Likewise upstream alerts/events will be queued at the client to be sent when online.
For Protection - Live Protection (additional cloud based checks for files) uses cloud lookups so these would fail. Web protection features use SXL queries to the cloud to both classify the category of websites and if they are malicious- so both protection and Control functionality, these would also fail but then you're not browsing the web when you're offline so not really an issue.
There is of course all the local virus data so that's still in place along with the behaviour detection rules. So it's probably an appropriate level of security given that the machines is offline.
