I´ve installed astaro free home edition and I´d like to be able to unblock these sites (yahoomail, gmail, hotmail)

How do I do this while maintaining blocked https proxy sites?

Is there a way to leave totally unfiltered just one computer in my network?

yes. go to advanced in the http/s proxy and add the host you don't want to be subject to filtering to the skiplist.
