upgrading to this version drops support for android versions 5x and 6x and also iOS 11x also support for device administrator.
does this mean that the os versions and enrolment mode will no longer be managed and will loose communication with the sophos server? or will they still continue to be managed until we can wipe and re-enrol a new device into android enterprise?

As per validating internally, they’ll still be managed however if any issue is encountered on those devices that use old OS they’ll not be supported.
