device unenrolment leaving specific apps on the device

when unenrolling devices mainly apple but maybe android too is it possible to leave the apps on the device once the device is unenrolled? the appls were insalled via sophos.

we need to unenol some devices but specifically want to leave the MS outlook App and MS authenticator app on the device so the enduser still has access to these once unenrolled

thanks but dont think thats what im asking, i want to be able to leave apps on the devices after they have been un-enrolled from sophos mdm.
