1) First Turn off temper protection.
2) Restart your machine.
3) After restarting Goto services.msc and stop all sophos services.
4) Goto control panel and uninstall Sophos Endpoint Agent.

Sophos quit being lazy and add the feature to uninstall the client from the central console.
I don't know if this will still help but awhile back I had an issue with the uninstall not going through, to catch everything I ran the below snip from a admin cmd. I then questioned if it did get everything but was able to reinstall Sophos then successfully uninstall it. Like I said I don't know if it will help but no harm in suggesting right?
wmic product where "name like 'Sophos%%'" call uninstall /nointeractive
